Amazing Coconut Pie
2 cups milk
3/4 cup sugar
1/2 cup Bisquick mix
4 eggs
1/4 cup butter or margarine
1 1/2 tsps. vanilla
1 cup coconut
Heat oven to 350 degrees. Combine all ingredients EXCEPT coconut in blender. Cover and blend on low for 3 minutes. Pour into greased pie dish and let stand for 5 minutes. Then sprinkle coconut over top. Bake for 40 minutes. Serve warm or chilled.
Splenda can be substituted for the sugar for those (like me) who can't have the sugar. It makes it's own crust with the Bisquick. One pie lasts me about two days.
