Apple Cranberry Cobbler with Spiced Whipped Cream
Simple, not-too-sweet, and a comfort food treat. This is a large recipe to accommodate guests that may beg for seconds and some "cobbler-to-go!"

Ingredients:
8 cups apples (peeled, cored and chopped) 10 ounces cranberries (thawed and drained, or fresh if available) 4 tablespoons Organic Valley Salted Butter 1/2 cup sugar 2 cups rolled oats (old fashioned, not the quick-cooking type.) 2 cups all-purpose flour (or substitute spelt four) 1/2 teaspoon double-acting baking powder 1 tablespoon vanilla extract 2 teaspoons cinnamon 1/4 teaspoon allspice 1/8 teaspoon nutmeg
sea salt (to taste) 1/3 cup maple syrup (Maple Valley) 1/2 cup Organic Valley Reduced Fat Milk 2% Milkfat 1 pint Organic Valley Heavy Whipping Cream 3/4 teaspoon cinnamon 1 teaspoon vanilla 2 tablespoons sugar
Instructions:
Serve warm with a hearty "plop" of Spiced Whipped Cream!
Note:
Apples and cranberries can be prepared up to 2 days prior (sprinkle with lemon juice), if stored in an air tight container and kept in the fridge.

Instructions:
- Preheat oven to 375 degrees.
Round up some assistants and prepare tart apples such as Granny Smith, Cortland, or your family's favorite heirloom variety. Thaw and drain frozen cranberries or wash and pat dry fresh berries. Toss cranberries and apples together into a 10x13" glass baking dish. - In a medium sized mixing bowl, using your hands, blend together: Organic Valley Salted Butter, sugar, old fashioned rolled oats (rub between hands to break into smaller bits), flour, baking powder, spices, vanilla extract and sea salt; to resemble a coarse meal.
- Stir in Organic Valley Milk and maple syrup, and the topping mixture will become somewhat sticky. Drop the cobbler mixture by the spoonfuls onto the apple/cranberry compote and pat down slightly. Sprinkle with sugar, if desired. Bake for 45-60 minutes, or until apples are soft and topping has become golden.
- Whip Organic Valley Heavy Whipping Cream with cinnamon, vanilla, and sugar until stiff. Serve atop warm cobbler and melt into the "comfort zone." Enjoy!
