Asian Veggie Slaw

Low-carb never tasted so good! Bright and colorful with plenty of fiber to boot, enjoy Asian Slaw with organic grilled chicken or steak!

Prep Time: 0:15

Ingredients:
4 cups bok choy (thinly sliced)
1 large carrot (peeled)
1 cup snow peas (strings removed and sliced lengthwise.)
1/2 cup red cabbage (grated)
1 tablespoon olive oil
1 tablespoon sesame oil (Eden Toasted Sesame Oil)
2 tablespoons rice wine vinegar
1 tablespoon tamari soy sauce (Eden)
2 teaspoons fresh ginger (minced)
sea salt (to taste)
Instructions:
  1. Place sliced bok choy and red cabbage in a large bowl; grate carrot into cabbage mixture. Toss in prepared snow peas.
  2. In a small bowl, mix oils, vinegar, tamari soy sauce, and ginger. Pour dressing over salad, toss to coat. Season to taste with salt.
Note:

For a burst of color and a unique flavor, try this unique vinegrette variation:
1 Tablespoon of olive oil
1 Tablespoon of Eden Toasted Sesame Oil
2 Tablespoons of Eden's Ume Plum Vinegar
2 teaspoons of grated fresh ginger
and sea salt to taste

My father in-laws cholesterol levels were found to be very high despite him being very fit (cycles in major competitions still) and generally eating healthily. Nevertheless, for some reason he has been found to have high cholesterol. This recipe seems a great one for him, I will pass it on.
