PREP TIME: 5 Min. COOK TIME: 30 Min. SERVES: 8
INGREDIENTS
5 cups hot water OR chicken broth
2 cups long grain white rice
2 medium tomatoes
1/2 medium onion
1 clove garlic
2 tbsp. oil
2 tsp. salt
1 tsp. cumin powder
1/4 tsp. black pepper
1/4 tsp. basil
INSTRUCTIONS
Heat oil in large skillet on high heat. Blend tomatoes, onion, garlic, salt, cumin powder, black pepper, basil, and a half cup of the water in blender until well blended. Add rice and stir continuously until rice is lightly browned, then add the ingredients from the blender. Stand back and you may even want to use a splatter screen until it calms down a bit. Stir while adding the water very gradually, trying to maintain the boil. Cover and simmer on low heat for 20 minutes. Do NOT stir the rice during these 20 minutes or take the lid off unless absolutely necessary. When done, carefully stir from the outer edges of the skillet in to the center to blend well without smashing the rice. Serve and enjoy!
Variations:
You may add some diced carrots,or potato chunks, or sliced onion to the rice a few minutes before adding the blended ingredients, if you wish. Or add some peas or corn when the rice is almost done, but remember NOT to stir the rice once it is simmering. You could also add some cooked chicken chunks to make it a complete meal.
