Banana Crepes
Ingredients for Filling:
1/3 cup sugar
1 1/4 cup sour cream
3-4 medium, ripe bananas
Directions for Filling:
Mix sour cream and sugar in small bowl. Peel bananas and slice thinly into a bowl. mix gently. cover and refrigerate. Then make the crepes
Ingredients for crepes:
1/2 cup milk
1 large egg
2 Tbl. vegetable oil
1 tsp vanilla
1/2 cup flour
1 Tbl. sugar
1/2 tsp. cinnamon
tiny tiny tiny pinch of salt. lol
Directions for crepes:
Combine milk, egg, oil, and vanilla in medium bowl. Beat until smooth with electric mixer. Beat in flour, sugar, cinnamon and salt until smooth. Heat skillet over medium heat. Brush surface with oil. 3-4 Tbls. of batter per crepe. Pour batter in pan and coat the bottom of pan. Put skillet over heat. Let cook for 1-2 minutes. The edges should begin to curl away from sides of pan. Lift edge; it should be a golden brown. Turnover and let cook one minute. The crepe will not brown evenly on second side. Slide onto wax paper to cool a bit.
Place the warm crepe on a plate. Spoon 1/2 cup of banana filling onto half of the crepe. Fold the crepe over and sprinkle with powdered sugar or even extra sliced banana (optional).
