Beet Salad

Beets are high in folate, a vitamin that may help ward off heart disease; this dish delivers 1/3 of your daily requirement.

Servings: Makes 4 servings.

ingredients

4 medium red or golden beets (4 ounces each), stems and root ends removed
1/3 cup walnuts, chopped
1 tablespoon balsamic vinegar
Freshly ground black pepper
1 tablespoon sunflower-seed oil
2 ounces lowfat goat cheese

preparation

Heat oven to 400°F. Wrap each beet in foil. Roast until soft, about 1 hour. Cool slightly; remove foil. Rub off skins; cut into wedges. Toss with nuts and vinegar. Season with salt and pepper. Add oil; toss. Divide among 4 plates; crumble cheese on top. Makes 4 servings.
 
The more i read these recipes the more ashamed i feel about my cooking skills lol:embarasse
 
I found out how good beetroot is for you and so now I have one daily with whatever I am eating for my dinner it goes with the vegetables we eat daily.
So glad I like it too.

[F]I'm ashamed to say that I've never actually eaten a beet. I have a disgusted outlook on radishes and being they are basically the same color, I'm afraid they will taste the same too. [/FONT]
 
I do not like radish as they can be quite hot.

Beetroot is so very different in taste and texture. You really should try them sister. I buy them already cooked in my local supermarket.
