If you come to my house this is what you get for breakfast, served with English muffins. My Aunt's fiance from Ireland had his first sample 2wks ago, he loved it and he's a very picky eater.
Preparation Time: 20 minutes
Cooking Time: 10 minutes
Serves: 3-4
Country: Trinidad and Tobago
INGREDIENTS:
1 medium onion
2 medium tomatoes
1 small scotch bonnet pepper
1 medium carrot
1 lime/lemon
1 egg
225 gram salted fish
½ tsp. white pepper
4 Tbsps. olive oil
lettuce
1 avocado pear
METHOD / DIRECTIONS:
1. Chop onion and tomatoes. Slice peppers, grate carrot, juice lime/lemon, boil egg and set aside.
2. Boil salted fish and remove from water. Cool and remove (pick) bones, then break into small pieces (shred).
3. Heat oil. Saute peppers, tomatoes, onion and pepper.
4. In the case of boneless saltfish, you may boil, cool and flake into small pieces.
5. Add lemon or lime juice.
6. Combine saltfish, egg and sauteed vegetables for 2 minutes. Remove from frying pan and place on a plate.
7. Garnish with lettuce, avocado pear (Zaboca) and grated carrot

For those not familiar with cooking saltfish,
Wash salt fish in water. Bring salt fish to boil, strain, repeat and rinse in cold water.
its very important to boil it so the extra salt will be removed. Soaking the fish softens the flesh and each water change reduces the salt.
Its good to taste the fish during this process.
If all the salt is lost the dish will have no taste.

saltfish is simply that--salted, dried fish, usually cod, though other fish (such as mackerel) can be used....foodnet
