Brule Jol ( my typical breakfast)

If you come to my house this is what you get for breakfast, served with English muffins. My Aunt's fiance from Ireland had his first sample 2wks ago, he loved it and he's a very picky eater.





Preparation Time: 20 minutes
Cooking Time: 10 minutes
Serves: 3-4
Country: Trinidad and Tobago
INGREDIENTS:

1 medium onion
2 medium tomatoes
1 small scotch bonnet pepper
1 medium carrot
1 lime/lemon
1 egg
225 gram salted fish
½ tsp. white pepper
4 Tbsps. olive oil
lettuce
1 avocado pear


METHOD / DIRECTIONS:

1. Chop onion and tomatoes. Slice peppers, grate carrot, juice lime/lemon, boil egg and set aside.
2. Boil salted fish and remove from water. Cool and remove (pick) bones, then break into small pieces (shred).
3. Heat oil. Saute peppers, tomatoes, onion and pepper.
4. In the case of boneless saltfish, you may boil, cool and flake into small pieces.
5. Add lemon or lime juice.
6. Combine saltfish, egg and sauteed vegetables for 2 minutes. Remove from frying pan and place on a plate.
7. Garnish with lettuce, avocado pear (Zaboca) and grated carrot

For those not familiar with cooking saltfish,

4. In the case of boneless saltfish, you may boil, cool and flake into small pieces

Wash salt fish in water. Bring salt fish to boil, strain, repeat and rinse in cold water.
its very important to boil it so the extra salt will be removed. Soaking the fish softens the flesh and each water change reduces the salt.

Its good to taste the fish during this process.
If all the salt is lost the dish will have no taste.

saltfish is simply that--salted, dried fish, usually cod, though other fish (such as mackerel) can be used....foodnet

We dont fry the eggs with the saltfish. We would boil the eggs, shell them and slice them. ( place then on a separate serving dish or place them along the edges or the dish the saltfish is on. )
You can toast the english muffins or just heat them, spread some butter on it.

You can use any type of bread.

I hope I have the money and the patience to cook like you one day sister ;)

Recently, I have been sort of forced to cook for myself. My mom never taught me how to cook and I live my brother and his girlfriend.

I have cooked a pasta dish by myself, after reading a recipe on the internet and lately my brother has been putting in his orders, lol.

I still call my brother's girlfriend to lend a hand so the rice won't burn and probably ask 10 times, how do I do that?

I'm not quite sure where to place my emotions, I guess I have to swallow them and learn, I'm bound to be self reliant in a year or two, so making a wonderful breakfast or dinner for friends or family might be a bonus.

If you're brother is putting in orders that means you're doing good.

As for me I come from a very traditional family, growing up the girls was always told they must learn to cook, clean take care of a house.

I'm no professional, but I love to cook.
I think its the best way to show people you care about them.

My grandmother would always say
" if you cant cook how you expect to keep your husband ".

I've burned rice , over cooked pasta, served chicken that wasnt fully cooked...lol
Its a learning process.

Sounds like a tasty dish. I'll try it out, if you cook it for me :D

Otherwise, I'm sticking with my flavored oatmeal ;0)
 
Of course I will.

I'll do anything to get you away from oatmeal, at least for one day. lol
