I wanted to try something like this, and finally got around to it! It's very simple and quick.
Ingredients:
1 pkg. chicken breast tenderloins (about 10 small ones)
1 small can of tomato paste
1 can of tomato juice
1 can of Ranch Style beans
1 can of new potatoes
2 tbsp butter(or margarine)
1 tsp garlic powder
2 tsp cayenne pepper
1 tsp onion powder
1 tsp of cumin
1 chicken boullion cube

Boil the chicken in a pot of water with the chicken bouliion cube and salt for about 30-45 minutes or until not pink and juices run clear when you cut them. Set aside to cool, because you will be shredding them & you don't want to burn your fingers!
In crockpot, pour in beans and tomato products. Cut up the potatoes into smaller pieces & pour them into the pot. After chicken is cooled, shred into small chunks and drop into crockpot. Stir in seasonings until everything is mixed nicely. Place heat on high for about 1.5 hours, stirring a couple of times. Right before it's done, put the margarine in. It makes a nice, thick stew that packs alot of flavor!
(add vegetables of your choosing, my husband is a picky eater so this is all we could go with!)
