Enchiladas

My husbands fave!

Ingredients:

1 lb. ground turkey(or beef)
12 corn tortillas
1/2 cup vegetable oil
1 can of chili(hot)
1.5 cup of shredded cheese
Optional:
1 packet of Taco Bell Taco Seasoning
Cayenne pepper
s&p

Cook meat in pan until done, then season with cayenne pepper and taco seasoning if preffered (makes creamy). While meat is cooking, cook tortillas in oil in small frying pan on medium heat, turning after 30 seconds. Place on plate with paper towel that will soak up excess oil. After tortillas cool off, place 2 tbsp of meat in each one, roll up, and place in 9x12 baking dish. Heat up chili in bowl and pour over each enchilada. Then pour cheese over top. Place in oven at 350 for 15-20 minutes. Serve with refried beans or mexican rice. :)
 
I will try this recipe, since I don't eat pork or beef, I'm always looking for other recipes that use chicken, or turkey. Thank you so much.

I have printed this one out, it's going on my shopping list today and will be the main course in the meal that I am making for my husband, so you never know it might become my husbands favourite too!

This is good, although i prefer Lawry's Taco Seasonings, and no cayenne pepper, and i add diced yellow onion, and you can have ranch style beans on the side. yummy :)
