Farm Friends Low Carb Chicken Meat Loaf

Easy to create, and makes awesome lunchtime leftovers. You won't miss the bread crumbs packed into the classic beefy meat loaf recipes!

Total Time: 1:10
Servings: 6

Ingredients:
4 1/2 fluid ounces no-salt-added tomato paste (Muir Glen)
1/4 cup dry red wine (organic)
1/4 cup water
2 cloves fresh garlic (minced)
1/4 teaspoon basil leaves (dried)
1/8 teaspoon cumin
1/8 teaspoon paprika
1/8 teaspoon dried oregano
1/8 teaspoon sea salt
3/4 pound Organic Valley Ground Chicken Chub
3/4 cup rolled oats (old fashioned)
1 large Organic Valley Grade A Extra Large Brown Egg
1/2 cup zucchini (Organic Valley)
Instructions:
  1. Preheat the oven to 350°F. Combine the tomato paste, wine, water, garlic, basil, cumin, paprika, oregano, and sea salt in a small saucepan. Bring to a boil, and reduce the heat to low. Simmer, uncovered, for 15 minutes. Set aside.
  2. Combine the Organic Valley Ground Chicken, rolled oats, Organic Valley egg, shredded zucchini, and 1/4 cup of the tomato mixture in a large bowl. Mix well. Shape into a loaf, and place in an ungreased 8"x 4"loaf pan. Bake for 45 minutes. Discard any drippings.
  3. Pour 1/4 cup of the remaining tomato mixture over the top of the loaf. Bake for 15 minutes longer. Transfer to a serving platter. Cool for 10 minutes before slicing. Serve the remaining tomato sauce on the side.
Note:
Makes great leftovers! Serve with a fresh green salad, topped with hard boiled Organic Valley Eggs and your favorite Annie's Naturals Salad Dressing.

191 Calories, 9g Fat (43.5% calories from fat), 14g Protein, 12g Carbohydrate, 2g Dietary Fiber, 101mg Cholesterol, 159mg Sodium. Exchanges: 1/2 Grain(Starch), 0 Lean Meat, 1 Vegetable, 0 Fat.
 
Hi Chad,

We tried the 'snow on the mountain' Friday night with the enchalada recipe and the beans tasted yummy. I usually have to 'close my eyes and think of England' when it comes down to eating green vegetables but these were really nice and went so well with the feta chese.

Regarding the meatloaf recipe could you please tell me what chub is as there seem to be only two references I can find in the dictionary, one is to do with fish, and other well let's just say I'm pretty sure you didn't mean the name of a people in alliance with Egypt in the time of Nebuchadnezzar! Ezek. 30:5 lol..

As far as I am aware I don't think we have this word in England.

Hmmm Interesting

:embarasse You know I like meatloaf but I've never tried chicken meatloaf. But it sounds good and low-fat I think I'll try it. Thanks a million

hi Eve, i think the 'Organic Valley Ground Chicken Chub' ''Chub'' is like the thickness of how it is ground up, like ground 'Chuck' for beef,
i did a search and found a web site for the 'Organic Valley Ground Chicken Chub' i'm sure if you do a search you can find it too...

'Chub', 'Chuck' who thinks of these words anyway!!! OK I may do a search on the net if I have some time to kill, thanks for the info. I'm a little clearer at least now thanks to you I know it is a measurement of thickness!!! lol Double pun not intended! Gosh I can be so 'Chub' sometimes!
