This is one of our favorite summer desserts. I have given the light version
of this recipe for a healthy dessert.
Fruit Pizza
Crust:
Melt 1/2 cup + 2 Tbsp. Smart Balance Buttery Spread
1 cup All Purpose Flour
2 Tbsp. Sugar or equivalent of splenda
Mix together and spread onto round pizza pan.
Bake @ 350 degrees for 10-15 minutes. Cool completely.
Cream:
1 8 oz. Light Cream Cheese (softened)
1 cup Powdered Sugar
1 Light Cool Whip (medium)
Mix together well with mixer and spread onto cooled crust
Topping:
Fresh fruit of your choice, sliced or cut into small pieces
Arrange on top of cream
Glaze:
1/4 cup Water
1/3 cup Orange Juice
1/8 cup Lemon Juice
1 Tbsp. Corn Starch
1/3 cup sugar or equivalent of splenda
Microwave 1 1/2 minutes - Stir
Repeat above
Microwave 1 minute - stir and pour over fruit. Chill pizza. Enjoy!
Note: I usually cut up my fruit while the crust is cooling.

a large jelly roll pan.
