Is anyone here interested in German recipes? About "Sauerbraten", or sauerkraut dishes. Or something sweet like homemade gingerbread (which is eaten at Christmas)?

Is gingerbread supposed to be hard or soft? All the recipes I have tried are thing and hard like cookie. But when I bought some in Germany it was soft and thick like bread.

most of the gingerbread you can buy in german shops is like it should be
Maybe to have it in the oven longer that it need to be?

If you have some gingerbread and want to make it more soft this may help:

to soften them only a little:
Cut an apple and put it to the gingerbread in the box.

to really soften them:
Put the gingerbread on a grate back into the (cold) oven. (middle or top row)
Take a pot and cook some water in it and put this into the oven as well (beneath the gingerbread). Close the (cold) oven and wait about 2 hours.
