most of the gingerbread you can buy in german shops is like it should be
Maybe to have it in the oven longer that it need to be?
If you have some gingerbread and want to make it more soft this may help:
to soften them only a little:
Cut an apple and put it to the gingerbread in the box.
to really soften them:
Put the gingerbread on a grate back into the (cold) oven. (middle or top row)
Take a pot and cook some water in it and put this into the oven as well (beneath the gingerbread). Close the (cold) oven and wait about 2 hours.
