Giant triple-choc crunchy cookies


125g butter, softened

1 teaspoon vanilla essence
65g cup brown sugar
80g caster sugar
1 egg
200g self-raising flour
170g cornflakes
190g choc bits (white, dark, milk or a mixture)


1. Preheat oven to 180°C.
2. Grease and line 2 baking trays with baking paper.
3. Using an electric hand mixer, beat butter, vanilla, brown sugar, caster sugar and egg in a bowl until mixture is smooth and well
combined.
4. Sift flour over butter mixture and use a large metal spoon to stir in until just combined. Add cornflakes and choc bits. Mix well.
5. Split mixture in 12 bits, roll into balls and place on prepared baking trays, making sure they are at least 6cm apart.
6. Using damp fingertips, flatten cookies slightly.
7. Bake for 8 minutes. Swap trays over in the oven and bake for a further 7 to 8 minutes or until light golden.
8. Stand cookies on trays for 3 minutes.
9. Transfer to a wire rack to cool completely. Serve.

Makes 12 servings
Can be stored for 1 week in airtight container

That sounds too good!

I think I would sprinkle some coconut on them too.
 
Maple Tea

Add pure grade A maple syurp to hot water.

Add till desired sweetness and flavor.

It tastes so good it must be bad for you!


I drive over Shade mountain in central Pa. USA while traveling between the two quarries I work for. There is a small building about the size of an old out house along the Route 104 where they sell fresh maple syurp on the honor system. One day I stopped and bought some maple syrup and took it back to National Limestone Quarry where I work. We have a hot or cold water dispenser. Some times we make tea or instant coffee or hot coca. One day I thought about trying maple syurp in my tea but decided to skip the tea after I saw the maple tea. I tasted it and a new drink was born.
