This makes a wonderful side dish to any meal
1 mango
1/2 seedless cumber (You can use any type of cucumber but I just like seedless, also it tends to work out better)
Jalapeño (or a good chilie powder)
Lemon juice
Cilantro
1/3 red onion
salt
first peel your mango and dice it into small cubes, and do the same with your cucumber. Add them to a medium bowl with some small diced red onion and finely minced jalapeño pepper (to your liking)
Mi that up good and add some freshly chopped cilantry. Add some salt, and mix it well with a small amount of oil (a few tablespoons will do) and ample lemon juice (I like to get maybe half a cup in there for good measure).
If you don't have any peppers aroun, I recommend you mix the lemon juice, oil, and chili powder in a measuring cup or a small bowl then add it to your salsa
