Marinated Mango

Mango is good enough on its own to encourage mass consumption, but here we combine it with jicama for crunch and cayenne for a hint of heat.
Note: If making the salad ahead of time, leave out the mint leaves and mix them in just before serving.

Ingredients
- 3 pounds mangoes (about 3 to 4 medium mangoes)
- 1/2 pound jicama (about 1 small jicama), cut into 1/2-inch-thick matchsticks
- 1/4 cup freshly squeezed lime juice
- 1/2 teaspoon cayenne pepper
- 1 teaspoon kosher salt
- 1/2 cup packed small mint leaves
- Peel mangoes and cut in half lengthwise to remove the flesh from the pit. Slice lengthwise into 1/2-inch-thick strips.
- Combine mango with remaining ingredients and let sit at least 20 minutes or overnight before serving.
