Meat Loaf

Mix the following in a big bowl:

1 1/2 lbs of meat loaf mix (1/2 ground beef & 1/2 ground pork)
1 1/2 cups Cracker crumbs (use food processor)
1/2 cup Katsup
1 tbl Soy Sauce or Whosterire Sauce
1 small onion chopped
1/2 tsp Garlic Salt
dash of pepper
1/4 tsp celery seed
2 eggs

Mix well, form into a loaf, add a few squirts of katsup on top, and sprink with parsley flakes bake 1 1/2 hrs at 350.
 
Mmmmmm,MRoe. I had never heard of using ground pork, that sounds very good.
 
I tried this recipe, replacing the ground pork with spicy pork sausage. My husband liked it alot. I prefer using ground turkey for meat loaf, but my husband thinks I use turkey and chicken too much.

Amazing to read your recipe it is almost like my mom's only she adds a banana to it, oatmeal and no celery seed.

I've taken to make changes each time I make meatloaf. Thankfully, they have improved with my experiments... the first substitutions didn't taste so good. Like a pear instead of a banana - not good at all. And then in my "health kick" I added a bag of frozen (cooked) mixed veggies - yuck. So now I do half beef and half turkey or around about that amount. And instead of Heinz ket. often I use barbeque sauce. And for cracker crumbs I use oat meal or older bread cut up small if I don't have crackers around at the time.

I also like to double my recipe or by 4 then I cook all of them, let them cool and freeze the ones we don't use. They work great for a meal in a pinch or if I need to take food to someone sick, new parents and so on. The nice thing is that we've already tasted a loaf - so no worries if the frozen one tastes bad. :wink:

A funny thing though... careful how you label for the freezer - one batch that I made was my best ever and that's what I labeled them. I took one to a friend and didn't change the label, they got a chuckle from that label for awhile. ;)
