Norwegian cake

Does anyone here know how to make Norwegian (sponge) cake? I don't know the actual name of it, my mom always just called it "Norwegian cake". It is not really a sponge cake though - it has a top crust that is really white and hard and crackled, but the inside of it is really moist and rich (so much so, that you can squish it into a dense little ball), so it's not light and fluffy like a sponge cake. I really don't know how to describe appropriately, I wish I could. My mom lost the recipe several years ago and doesn't know how to make it anymore, and I absolutely loved having it growing up, and I really miss having it as it was my favorite desert!!

It's really hard to find the recipe (I've tried) without knowing the actual name of it. But God-willing I will have it again! Thanks for any help you can offer!
 
Marie's Fun Cooken,

Marie was a World War 2 war refugee who came to live with my family when I was a baby. She had a son in a Russian concentration camp who died there and a son who came with her named Sigfreid.

Fun cooken is a breakfast food which we loved.

2 cups of Flower, 2 eggs and (to taste) sugar and enough milk to make a thin batter.

Put oil on a griddle and warm till a drop of water evaporates upon contact.

Place enough batter to equal a large pancake on the griddle. After it begins to brown scrape the top layer off to the side to make the fun cooken thinner.

Let brown then flip it over.

Add oil to griddle as needed.

Place fun cooken on a plate and put strawberry jam across a row in the middle and roll up the fun cooken.

Cut off a rolled up bite and enjoy it!

Two people eating will keep a cook buisy.
