Preheat oven to 400 F.
Serves ~ 4
Ingredients:
3 Tsp Olive oil
1 tspn Kosher
Fresh herbs (see notes below)
6 medium Yukon Gold potatoes
6 or more cloves of garlic (whole and peeled)
While oven is preheating, cut 6 medium sized Yukon Gold potatoes to 3/4 to 1" pieces. Toss with 2 Tsp Olive oil, 1 tspn Kosher salt, and 1-2 Tsp fresh herbs, I like to use thyme. Remember that if you use dried herbs, to cut the amount in 1/2. Place in a baking dish and bake for ~45 minutes checking/turning every 15 minutes. After the first 15 minutes, add the garlic. When done, toss with 1 Tsp frsh chopped parsley (I am partial to flat or Italian parsley), 1/2 tspn fresh ground pepper, the last 1 Tsp of Olive oil and serve.
