Simple Honey and Garlic Sauce

Here is a very simple recipe which is ideal for 'chefs' like me!

  • Get yourself some fresh garlic cloves, a small handful being sufficient, and some honey, both preferably sustainably farmed and produced, being organic, too.
  • Peel the cloves of garlic. It can help if you tap them firmly on a bench as much as possible on all sides as this will help the peeling.
  • Chop the cloves up with a sharp knife until quite small then put them in a clean glass container, something like an old jar, not too big as it is a small recipe. (you could use a garlic crusher if you have one)
  • Next, add/pour enough honey to cover the cloves and a bit more so that you have roughly even proportions of both garlic and honey. 50/50 is the rule of thumb.
  • Place lid on jar and let it sit in room temperature conditions for a couple of days. When you remember it, give it a shake and if your honey was quite firm to begin with, you may need to stir occasionally but you shouldn't have to as the two ingredients will work together for good.
  • Done.
  • after a couple of days you can put it in and keep it in the refrigerator if you have one, which is ideal in warmer climates or if you are in the brrrrr cold, you can leave it on the shelf.

It will become a little runny but will be quite yummy!!

How to use it?
You can dip a teaspoon in and pop it in your mouth and relish it until chewed and swallowed or...
add it to any dish you think it might be nice with. Nice on a sandwich with plain vegies or with a bit of meat or both. Nice on rice. Nice with any other cooked dish that both honey and garlic would go well with.
Remember it is a little runny and you really don't need a lot.
I haven't tried it but I imagine it would be fine if lightly cooked with a dish you are preparing by simply adding a small spoonful to your dish and stirring it in.

A good thing about this sauce is that both ingredients will help keep it for a long time, if you don't consume it all in a hurry.
Once you have tried this small dose recipe you might like to double or triple the mix, always keeping the ratio about 50/50 (equal parts garlic and honey)

I think most of us know a little about the health benefits of garlic and honey on their own and combined you have the flavour of both without the bite that raw garlic has on it's own and a much less distinct garlic after smell that can upset others if they are that way inclined!

Try it! It really is as simple as that.
