PREP TIME: 10 Min. COOK TIME: 10 Min. SERVES: 8
INGREDIENTS
8 large flour tortillas
2 cups chopped skinless, boneless rotisserie chicken breast
2 cups mozzarella cheese
2 medium onions, halved and sliced
2 tomatoes, halved and sliced
oil
INSTRUCTIONS
Heat griddle to 350, or you can use a skillet on medium high heat. Sauté sliced onions and tomatoes in skillet with 1 tbsp. oil, over medium heat, until tender (approx. 5 min.). Lightly coat griddle with 1/4 tsp. oil under each tortilla (for best flavor, use 1/8 tsp. oil and 1/8 tsp. butter). Place tortilla on griddle and cover half of tortilla with 1/4 cup mozzarella cheese. Add 1/4 cup of chicken chunks and some sautéed vegetables on top of the cheese and fold tortilla in half. Turn the quesadilla over when cheese has begun to melt. Lightly brown quesadilla on both sides. Enjoy with sour cream and avocado slices, if desired.
