I have to share with you a great recipe for brown rice. My husband and I were given a 20 or so pound bag or brown rice that was used at our church's World Outread week as part of a display.
I went on line looking for recipes on a easier better way to cook it. It is so good for us - yet when I've made it in the past - clean up was dreadful...in the rice cooker or stove top. It was given to me after a knitting club meeting. It is so easy, tastes great and clean up is a breeze. I double the recipe (except for the butter, salt and the cooking time). Then I freeze 1/2 of it for another day. We have really increased our brown rice consumption because of this recipe.
Baked Brown Rice
1 1/2 cups brown rice
2 1/2 cups water
1 tablespoon Butter
1 teaspoon salt (I use sea salt)
Preheat oven to 375 degrees F.
Place rice into an 8 inch square glass baking dish. I rinse my rice a few times to clean it, right in the pan before adding the other ingredients.
They say to boil the water, butter and salt together. Once the water is boiling pour it over the rice. I take the hottest tap water pour it over the rice,sprinkle the salt and cut up the butter pad & share the little pieces of it around the dish. Stir to combine, and cover the dish tightly with heavy duty aluminum foil. Bake on the middle rack of the oven for one hour.
After one hour, remove cover and fluff with a fork. (I've also left the foil on to keep it warm and the rice stays warm and moist). Enjoy!
