I don't think they counted them.

I think what they do is pull public records. For example, census data from those countries.
Birth certificates, etc. And statistical analysis based on other trends such as the average percentage
of individuals who may not have a birth certificate and then add that to what is known and approximate
statistically for the unknown.

That is my assumption on how they did it.

Pretty much an educated guess. Something that obviously would get you to the
exact number of people, but something that likely has a fair degree of statistical confidence.
