Yummy Apple Pudding
This is a delicious recipe my grandmother used to make.
It is excellent for utilising bread and fresh fruit that needs using.
Quantities can be adjusted according to taste
I will just give the basics here.
Ingredients
One large loaf of bread sliced
Butter for spreading
12-15 apples sliced and lightly stewed (good way to use up fallers)
Cupful of sultanas (optional)
Sugar to taste
Approximately 1 litre milk
2 eggs (optional)
Cinnamon and brown sugar for topping
1. Lightly grease a shallow casserole dish or pyrex dish with a little butter
2. Place a layer of the stewed apples (and sultana's if used) over the bottom of the dish
3. Then add a layer of the bread over the apples
4. Place another layer of apples (and sultana's if used) over the bread
5. Then add a layer of buttered bread over the apples (buttered side up)
6. Pour over the litre of milk (if using eggs mix them into the milk first)
7. Make sure the milk begins to soak through all the bread layers
8. Place in fridge and allow to stand for a few hours or over night if neccesary
9. Remove from fridge, if needed add further milk
10. Sprinkle liberally with brown sugar and cinnamon according to taste
Cook in a hot oven 180 degrees c, 375 degrees F or gas 4-5 for approximately 45 minutes
Top layers of bread should be crisp
Serve hot with cream, icecream or custard if required
Alternatives....really just add what you enjoy!!
Pears, blackberries, raisins can all be used according to taste
Cloves can be used with apples instead of cinnamon
The milk can be sweetened before poring over the bread for those with a sweeter tooth
The bread can also be left unbuttered and the pudding cooked covered with foil to give a softer pudding
