Healthy Wholemeal Banana and Honey Pancakes

2 large bananas
1 1/2 cups wholemeal self-raising flour
1 1/2 cups buttermilk
2 eggs, lightly beaten
1 tablespoon honey
Olive oil cooking spray
Honey and reduced-fat passionfruit yoghurt, to serve

Method
1. Mash 1 banana in a bowl
2. Place flour in a bowl. Make a well in the centre.
3. Combine buttermilk, eggs, honey and mashed banana in a jug.
4. Pour into well. Whisk until smooth.
5. Stand for 10 minutes.

6. Spray a large, non-stick frying pan with oil. Heat over medium heat.
7. Spoon 1/4 cup batter into pan.
8. Cook for 2 to 3 minutes or until bubbles appear on the surface. Turn.
9. Cook for 1 to 2 minutes or until golden and cooked through.
10. Transfer to a plate. Cover to keep warm.
11. Repeat with remaining batter to make 12 pancakes.

12. Thinly slice remaining banana.
13. Place pancakes on plates. Top with sliced banana, honey and yoghurt.
14. Serve
Delicious!!!
Note to @Eric E Stahl and @AbbysAunt No gherkins or dill pickles to be added

Hello! Wow! this is good. I am really craving for it right now. Thanks for sharing your recipe here. My family do love pancakes especially during breakfast but I only cook the traditional one, with butter and syrup. I guess, this will be healthy because of the banana ingredients and honey of course:)

They really are very delicious @starsoutfielder
And healthier than the traditional butter and syrup ones (although they are very yummy too )

Try the banana honey pancakes with some blueberries too or a scoop of icecream

The Lord is so good....He provides our daily bread so abundantly.
A couple of weeks ago when our supplies ran low we received a food parcel and fruit and vegetables. ....enough to Last until we were able to stock up again.
