Banana and honey pancakes

I remember years ago when I worked in a hospital, one of my fellow nurses, Merle, who was from Jamaica, was telling me about her busy morning with her two little kids, and how she popped her pancakes in the oven. I interrupted her and asked her how on earth does one put pancakes in the oven?? Apparently this is how Jamaicans do pancakes, according to Merle!

She explained to me that she puts the pancake batter in muffin tins and bakes them like an actual muffin or cake! Well, I tried it, and indeed, they puff up like a little muffin! How sweet to pour maple syrup on them!

So, don't be afraid to try it, especially for brunch and/or for company!

Just a healthy yummmmmmy option for this delicious pancake

Substitute the buttermilk for Almond Milk.....and add some fresh blueberries to the garnish.

Healthy Wholemeal Banana and Honey Pancakes

2 large bananas
1 1/2 cups wholemeal self-raising flour
1 1/2 cups buttermilk
2 eggs, lightly beaten
1 tablespoon honey
Olive oil cooking spray
Honey and reduced-fat passionfruit yoghurt, to serve


Method
1. Mash 1 banana in a bowl
2. Place flour in a bowl. Make a well in the centre.
3. Combine buttermilk, eggs, honey and mashed banana in a jug.
4. Pour into well. Whisk until smooth.
5. Stand for 10 minutes.

6. Spray a large, non-stick frying pan with oil. Heat over medium heat.
7. Spoon 1/4 cup batter into pan.
8. Cook for 2 to 3 minutes or until bubbles appear on the surface. Turn.
9. Cook for 1 to 2 minutes or until golden and cooked through.
10. Transfer to a plate. Cover to keep warm.
11. Repeat with remaining batter to make 12 pancakes.

12. Thinly slice remaining banana.
13. Place pancakes on plates. Top with sliced banana, honey and yoghurt.
14. Serve
